How do I delete ADW launcher and CyanogenMod off of my nexus one?

You have to install a different ROM to get rid of it. You can use ROM manager from the market or you can go onto XDA developers forum and select one you like.

You can remove ADW launcher by either downloading another launcher (like LauncherPro) or using titanium backup to remove it (it can remove apps set as system apps).

Well first option doesn't delete it, it merely replaces it
