This is an awesome site that will tell you all about what rooting means, how to do it and the risks that go with it. They even have recovery links if you do mess your phone up.
Now one you do root they have all the cool stuff that you can apply to your phone. Everything from custom roms to boot logos to boot animations to custom batery meters etc.
also www.droidpirate.com (i believe) has a lot of metamorph themes to further customize your phone.
