speaker-independent / voice digit dialing

What is meant by "speaker-independent / voice digit dialing"? I am looking for a blue tooth phone that has voice dialing (why pay the company extra?). If you're gonna have a blue tooth in your ear and the phone is in your pocket, briefcase or glove box, why must one get it out to dial? Can this phone dial through blue tooth via voice?

I am able to hit the button on my blue tooth head set and it asks me to say a command, I then say name dial and then it asks me for the name and I just say the name and it dials that person.
