There's a couple ways to do it. One of them involves "rooting" your phone. Basically, this means hacking your phone to get increased access to the hardware.
Once you have "root" access (the UNIX term for Administrator rights, adopted by Linux, from which Android is derived), you can do all kinds of non-standard things, including using the built-in WiFi to create your own portable hot spot.
If you look at the "WiFi Hotspot" thread, the basic instructions there should work for Eris too.
The simpler method uses the USB port; you'll need to get the appropriate driver on your PC, as well as an app on your Eris, but it basically makes your phone appear to be a USB Ethernet card. It's simpler because you don't have ...

Many of the "leaked" updates I have seen are really rebuilt or scratch built rom images. These require root access (ie, "rooted") to install, and once installed, continue to give you those elevated privileges.
Not sure what you mean by mirror things? There's reflectors (usually called mailing lists), and Forums (like PhoneScoop). There's also creating an image (sometimes called a mirror) of you ROM, so you can restore it if you need to.
Though a word of caution.. if you don't know what a root file is, you might want to consider NOT rooting your phone until you read up on it more.

pandaHome is compatible with most themes available. Note that not all of them are free, of course.
There isn't exactly a widget in the same way that Sense has one, but if you get weatherbug, it has weather info, and it will show current conditions in the notification bar, along with a red triangle for alerts. The upgraded weatherbug might have a widget? I don't know. I'm pretty happy with the free one....
