When you have the 5600 in discoverable, hit the Menu button, select Devices, then Menu again, and select new. And of course make sure the bt250 is set to pairing mode.
It took me a few mins to figure this out as well, and couldn't find the documentation for it anywhere (wasn't patient enough to use the cd...)
