Always Display Date/Time?
Is it possible to have the date/time display at all times when the phone is closed? When the volume button is pressed, the time is displayed brightly for a few seconds, then dims, then goes off altogether.

It is not possible. It would drain your battery having it on all the time. It dims itself to conserve battery life.
