if something happens to your 8100, will you get a new 8100 or will they be giving you a 8300?

If you have to do a warranty replacement with your 8100 (up to 1 year after purchase) you will get a FRU (refurbished) 8100, not an 8300. They will have plenty of FRU's in stock for a long time to come. Also, if you have insurance and are doing an insurance claim, you will also get another 8100.
